Description

These Mediterranean Quesadillas are not your ordinary cheese-filled tortillas; they are bursting with fresh flavors, including creamy feta, gooey mozzarella, and vibrant spinach, making them a delightful twist on a classic.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper. Mix well.
  2. Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on half of the tortilla. Fold it over to cover the filling.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Place the filled tortilla in the skillet and cook for about 3-4 minutes until golden brown.
  5. Flip carefully using a spatula and cook for another 3-4 minutes until both sides are crispy. Remove from heat, slice into wedges, and serve warm.

Notes

Let the quesadillas rest for a minute after cooking before slicing for the best results. They can also be prepared in advance and stored in the fridge.
