Instructions
- Prepare the Tzatziki Sauce: In a medium bowl, mix together the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper. Stir well and set aside.
- Combine the Salad Ingredients: In a large mixing bowl, toss together the chickpeas, diced cucumber, halved cherry tomatoes, finely chopped red onion, sliced Kalamata olives, and crumbled feta cheese.
- Add the Dressing: Drizzle the olive oil and lemon juice over the salad mixture. Season with salt and pepper to taste, then toss gently.
- Finish with Fresh Herbs: Add the fresh parsley and dill, mixing them gently into the salad.
- Serve and Enjoy: Serve the salad cold, with a generous dollop of tzatziki sauce on top of each serving.
