Description

A delicious and simple side dish, Melting Sweet Potatoes features the natural sweetness of sweet potatoes paired with rich maple syrup and crunchy pecans.

Ingredients

  • Sweet potatoes
  • Butter
  • Maple syrup
  • Pecans
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the sweet potatoes into chunks.
  3. In a large bowl, toss the sweet potatoes with melted butter, salt, and pepper.
  4. Arrange the potatoes on a baking sheet and roast for about 25-30 minutes until crispy and golden.
  5. While the potatoes are roasting, make the maple pecan sauce. In a small saucepan over medium heat, combine maple syrup and chopped pecans; cook for 7 minutes.
  6. Drizzle the maple pecan sauce over the roasted sweet potatoes before serving.

Notes

Make sure to cut the sweet potatoes into even pieces for uniform cooking. For an added crunch, toast the pecans before mixing them with the maple syrup.
