Description

Ingredients

  • 1 pound Ground beef
  • 1 cup Rice
  • 1 can Diced tomatoes
  • 1 cup Beef broth
  • 1 packet Taco seasoning
  • 1 cup Shredded cheese
  • Juice of 1 Lime
  • Salt and pepper to taste
  • 1 tablespoon Olive oil
  • Chopped cilantro, avocado, and sour cream (optional toppings)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned.
  3. Drain excess fat, then stir in taco seasoning.
  4. Add rice, diced tomatoes, and beef broth to the skillet.
  5. Bring the mixture to a simmer, cover, and cook according to rice package instructions (usually about 15-20 minutes) until rice is tender.
  6. Stir in lime juice and shredded cheese until melted.
  7. Season with salt and pepper to taste.
  8. Serve with optional toppings as desired.

Notes
