- 1 cup Rice
- 1 can Diced tomatoes
- 1 cup Beef broth
- 1 packet Taco seasoning
- 1 cup Shredded cheese
- Juice of 1 Lime
- Salt and pepper to taste
- 1 tablespoon Olive oil
- Chopped cilantro, avocado, and sour cream (optional toppings)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the ground beef and cook until browned.
- Drain excess fat, then stir in taco seasoning.
- Add rice, diced tomatoes, and beef broth to the skillet.
- Bring the mixture to a simmer, cover, and cook according to rice package instructions (usually about 15-20 minutes) until rice is tender.
- Stir in lime juice and shredded cheese until melted.
