A comforting, cheesy casserole filled with seasoned ground beef, tortillas, and melted cheese, perfect for weeknight dinners or gatherings.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 can black beans, drained
- 1 cup corn kernels
- 1 can diced tomatoes
- 1 cup salsa
- 1 packet taco seasoning
- 8 small corn tortillas or 6 flour tortillas
- 2 cups shredded cheddar cheese
- ½ cup sour cream
- Salt and pepper, to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic and sauté for 2-3 minutes.
- Add ground beef and cook until browned, draining excess fat as needed.
- Stir in taco seasoning, diced tomatoes, salsa, black beans, and corn. Simmer for 5-7 minutes, adjusting seasoning with salt and pepper.
- Grease a casserole dish and layer tortillas on the bottom. Spread half of the beef mixture, followed by a layer of cheese. Repeat with remaining tortillas, beef, and top with more cheese.
- Cover with foil and bake for 20 minutes, remove foil and bake for an additional 10 minutes until cheese is melted and bubbly. Cool slightly and serve with sour cream and cilantro.
Notes
Lean ground beef recommended to avoid excess grease. Customize with jalapeños for heat or make it vegetarian by using lentils instead of meat.
