- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/2 cup chicken broth
- 1/4 cup lime juice
- 1/2 cup tomato sauce
- Salt to taste
- Pepper to taste
Instructions
- Heat a large skillet or Dutch oven over medium-high heat.
- Pour in olive oil and add chopped onion, cooking until soft.
- Stir in minced garlic and cook for another minute.
- Sprinkle in all spices and stir for 1-2 minutes.
- Deglaze with chicken broth, then mix in lime juice and tomato sauce. Season with salt and pepper.
- Add chicken breasts, cover, lower heat, and simmer for 20-25 minutes.
- Transfer chicken to a cutting board and shred with two forks, returning it to the skillet to soak in sauce for 5-10 minutes.
- Adjust seasoning and serve in tacos, nachos, or with rice.
