- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1 lime, juiced
- 1/2 teaspoon chili powder
- 1/2 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- Salt to taste
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for 10-15 minutes, turning occasionally until slightly charred.
- In a small bowl, mix together the mayonnaise, lime juice, and chili powder.
- Remove the corn from the grill and coat generously with the sauce.
- Sprinkle cotija cheese and cilantro over the sauced corn.
- Season with salt to taste and serve immediately.
Notes
For a lighter version, use Greek yogurt instead of mayonnaise. To enhance flavor, try adding garlic powder or smoked paprika to the sauce.
