Description

A delicious and vibrant Mexican street food featuring grilled corn slathered in a creamy, tangy sauce, topped with cotija cheese and cilantro.


Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1 lime, juiced
  • 1/2 teaspoon chili powder
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for 10-15 minutes, turning occasionally until slightly charred.
  3. In a small bowl, mix together the mayonnaise, lime juice, and chili powder.
  4. Remove the corn from the grill and coat generously with the sauce.
  5. Sprinkle cotija cheese and cilantro over the sauced corn.
  6. Season with salt to taste and serve immediately.

Notes

For a lighter version, use Greek yogurt instead of mayonnaise. To enhance flavor, try adding garlic powder or smoked paprika to the sauce.
