Description

A hearty and comforting soup featuring black beans and spices, perfect for any occasion.

Ingredients

Scale
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Tortillas or rice for serving

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until softened, about 3-5 minutes.
  2. Add the black beans, diced tomatoes, cumin, chili powder, and vegetable broth. Stir well to combine.
  3. Bring to a boil, then reduce to a simmer and cook for about 20-25 minutes, stirring occasionally.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh cilantro, with warm tortillas or rice.

Notes

For a creamier texture, blend partially with an immersion blender. Use low-sodium broth to control salt content.
