Description

Ingredients

  • 2 cans black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Tortillas or rice for serving

Instructions

  1. In a large pot, sauté the onion and garlic until soft.
  2. Add the cumin and chili powder, cooking for another minute.
  3. Stir in the black beans, diced tomatoes, and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Season with salt and pepper to taste and serve hot with warm tortillas or over rice.

Notes

For a thicker soup, use an immersion blender to puree a portion of the soup. Adjust spice levels with cayenne or jalapeños if desired.
