- 2 cans black beans, rinsed and drained
- 1 can diced tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups vegetable broth
- Salt and pepper to taste
- Tortillas or rice for serving
Instructions
- In a large pot, sauté the onion and garlic until soft.
- Add the cumin and chili powder, cooking for another minute.
- Stir in the black beans, diced tomatoes, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste and serve hot with warm tortillas or over rice.
Notes
For a thicker soup, use an immersion blender to puree a portion of the soup. Adjust spice levels with cayenne or jalapeños if desired.
