Delightful mini apple pies made with puff pastry that are easy to prepare and perfect for any occasion.

- 4 small fresh apples, finely diced
- 1 tablespoon butter
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1 sheet puff pastry dough, thawed
Instructions
- Preheat your oven to 425°F (220°C) and spray 9 muffin tin cups with oil.
- In a skillet, combine diced apples, butter, brown sugar, and cinnamon. Cook on medium-high heat for 2-3 minutes, then cover and simmer for another 10 minutes.
- Roll out the puff pastry to 11×11 inches and cut into 9 squares. Press each square into the muffin tin cups.
- Fill each pastry cup with the apple mixture until about 3/4 full. Optionally, fold the corners of the pastry over the filling and brush with an egg wash.
- Bake for 20-25 minutes until golden brown and puffed up.
Notes
Serve with vanilla ice cream, whipped cream, or a drizzle of caramel sauce. Store in the fridge for up to 3 days or freeze for a month.
