Description

These Mini Blackberry Lavender Cheesecakes are a delightful treat that combine creamy richness with floral lavender notes and tart blackberries. Perfect for gatherings or weeknight dinners.

  • 5 tbsp (65g) sugar (for topping)
  • 2 1/2 tsp cornstarch
  • 3/4 cup (100g) graham cracker crumbs
  • 2 tbsp (26g) sugar (for crust)
  • 3 tbsp (42g) butter, melted
  • 12 oz (339g) cream cheese, room temperature
  • 1/2 cup (104g) sugar (for filling)
  • 1 1/2 tbsp (12g) flour
  • 1/4 cup (58g) sour cream
  • 2 tsp lavender extract
  • 1/2 tsp vanilla extract
  • 2 large eggs, room temperature
  • Violet gel icing color, optional
  • 1/2 cup (120ml) heavy whipping cream, cold
  • 4 tbsp (29g) powdered sugar
  • 1/2 tsp vanilla extract
  • 1214 blackberries for topping

Instructions

  1. Prepare the Blackberry Topping: Puree blackberries and strain to remove seeds.
  2. Cook the Topping: Combine blackberry puree, sugar, and cornstarch. Cook over medium-low heat until thickened, then refrigerate.
  3. Prepare the Crust: Preheat oven to 325°F (162°C), mix graham cracker crumbs, sugar, and melted butter. Press into cupcake liners and bake for 5 minutes.
  4. Make the Cheesecake Filling: Lower oven to 300°F (148°C), beat cream cheese, sugar, and flour on low until blended. Add sour cream, lavender, and vanilla, then eggs one at a time.
  5. Fill and Bake: Fill crusts with cheesecake filling and bake for 18-20 minutes. Cool gradually.
  6. Chill and Top: Refrigerate cheesecakes until firm, then top with blackberry mixture.
  7. Make the Whipped Cream: Whip heavy cream with powdered sugar and vanilla until stiff peaks form. Pipe on cheesecakes.
  8. Finish and Serve: Garnish with fresh blackberries before serving.
