Description

Delightful mini lemon cakes infused with lavender and topped with a sweet glaze, perfect for spring gatherings and elegant desserts.

Ingredients

Scale
  • 1 1/3 cups all-purpose flour
  • 1/2 tsp. kosher salt
  • 1/8 tsp. baking soda
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 Tbsp. grated lemon zest (from 2 lemons)
  • 2 large eggs, at room temperature
  • 1/4 cup sour cream, at room temperature
  • 1/4 cup whole milk, at room temperature
  • 1 tsp. vanilla extract
  • 1/4 cup whole milk (for glaze)
  • 1/2 tsp. culinary lavender
  • 1 1/2 cups powdered sugar
  • 1/4 tsp. kosher salt
  • 1/8 tsp. vanilla extract (for glaze), as needed
  • Edible flowers and lemon zest (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin tin by greasing it or using mini paper liners.
  2. In a bowl, whisk together the flour, salt, and baking soda. Set aside.
  3. In a separate mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the lemon zest, eggs, sour cream, whole milk, and vanilla until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Divide the batter evenly into the prepared muffin tin and bake for 15-18 minutes, or until a toothpick inserted comes out clean. Let them cool before glazing.
  7. In a small bowl, mix the powdered sugar, milk, culinary lavender, salt, and vanilla extract until smooth. If it’s too thick, you can add a bit more milk to reach the desired consistency.
  8. Dip the cooled mini cakes into the glaze, allowing the excess to drip off.
  9. Decorate with edible flowers and lemon zest for a stunning finish. Serve and enjoy!

Notes

For best results, use fresh ingredients, and ensure eggs and sour cream are at room temperature. Adjust glaze consistency as needed.
