Description

A delightful dish featuring tender chicken and fluffy couscous, flavored with aromatic spices from North Africa.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup instant couscous
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • 1 cup low-sodium chicken broth
  • 2 tbsp freshly squeezed lemon juice
  • 1 bell pepper, chopped
  • 2 carrots, sliced

Instructions

  1. Prep your ingredients by chopping the bell pepper and slicing the carrots. Mince the garlic for better flavor release.
  2. Mix the spices in a bowl and rub this blend all over the chicken breasts, coating them well.
  3. Heat olive oil in a skillet over medium heat and sear the chicken for about 6 minutes on each side until golden brown.
  4. Add minced garlic, bell pepper, and sliced carrots to the skillet and sauté until softened.
  5. Pour in chicken broth and lemon juice, bring to a simmer, then stir in the couscous. Cover and let it steam for about 5 minutes.
  6. Nestle the chicken back into the skillet and cover for another 5 minutes until heated through.

Notes

Allow the chicken to rest before slicing for juicier meat. Adjust spices to personal preference.
