- 4 boneless, skinless chicken breasts
- 1 cup instant couscous
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 1 cup low-sodium chicken broth
- 2 tbsp freshly squeezed lemon juice
- 1 bell pepper, chopped
- 2 carrots, sliced
Instructions
- Prep your ingredients by chopping the bell pepper and slicing the carrots. Mince the garlic for better flavor release.
- Mix the spices in a bowl and rub this blend all over the chicken breasts, coating them well.
- Heat olive oil in a skillet over medium heat and sear the chicken for about 6 minutes on each side until golden brown.
- Add minced garlic, bell pepper, and sliced carrots to the skillet and sauté until softened.
- Pour in chicken broth and lemon juice, bring to a simmer, then stir in the couscous. Cover and let it steam for about 5 minutes.
- Nestle the chicken back into the skillet and cover for another 5 minutes until heated through.
Notes
Allow the chicken to rest before slicing for juicier meat. Adjust spices to personal preference.
