Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook for 20-25 minutes, stirring frequently, until caramelized.
- Add thyme, salt, and pepper, and pour in broth; bring to a boil.
- Cook gnocchi according to package instructions; drain.

- Top with Gruyere and Parmesan cheese.
- Bake for 20-25 minutes, until cheese is bubbly and golden.
- Garnish with chopped parsley before serving.
