Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Gruyère cheese
  • Salt to taste
  • Black pepper to taste
  • Breadcrumbs (optional, for topping)

Instructions

  1. Cook the elbow macaroni according to the package directions, then drain and set aside.
  2. Melt the butter in a medium saucepan over medium heat. Sprinkle in the flour and stir continuously to create a roux, cooking for about one minute.
  3. Gradually whisk in the milk, stirring continuously until thickened.
  4. Lower the heat and add the cheeses, stirring until melted and smooth.
  5. Add salt and pepper to taste.
  6. Combine the cooked macaroni with the cheese sauce until evenly coated.
  7. If desired, transfer to a baking dish, top with breadcrumbs, and bake in a preheated oven at 350°F (175°C) for 20 minutes until golden brown.
