Description

A delightful twist on the classic Italian dish, this Mushroom and Spinach Lasagna features layers of tender noodles, savory mushrooms, and fresh spinach in a rich marinara sauce, perfect for family gatherings or cozy dinners.


Ingredients

  • Lasagna noodles
  • Olive oil
  • Mushrooms, sliced
  • Fresh spinach
  • Ricotta cheese
  • Marinara sauce
  • Mozzarella cheese, shredded
  • Parmesan cheese, grated
  • Garlic, minced
  • Salt
  • Pepper
  • Dried oregano
  • Dried basil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  4. Add mushrooms, salt, and pepper; cook until mushrooms are tender.
  5. Stir in spinach and cook until wilted.
  6. In a bowl, mix ricotta, oregano, dried basil, salt, and pepper.
  7. In a baking dish, spread a layer of marinara sauce. Place a layer of noodles, followed by a layer of the ricotta mixture, mushroom and spinach mixture, and mozzarella. Repeat the layers, finishing with noodles and marinara sauce on top.
  8. Sprinkle with parmesan cheese and remaining mozzarella.
  9. Cover with foil and bake for 25 minutes.
  10. Remove foil and bake for an additional 15 minutes or until cheese is bubbly and golden.
  11. Let it cool slightly before serving. Enjoy with a side salad!

Notes

Use fresh ingredients for the best flavor, allow the lasagna to rest before slicing, and don’t skimp on the cheese for a golden finish.
