Delicious mushroom-stuffed chicken breasts filled with creamy cheese and seasoned mushrooms, perfect for family dinners.

- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, diced
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme (optional)
- 1 teaspoon paprika (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, and sauté until the mushrooms are tender.
- In a bowl, mix the sautéed mushrooms with cream cheese, mozzarella, thyme (if using), salt, and pepper.
- Cut a pocket into each chicken breast and stuff it with the mushroom mixture.
- Season the outside of the chicken with paprika, salt, and pepper.
- Place the chicken in a baking dish and bake for 25-30 minutes until cooked through.
- Allow to rest for a few minutes before serving.
Notes
Make sure not to overstuff the chicken to avoid spills while baking. You can use other types of cheese, like cheddar, for different flavors. For a crispy crust, broil the chicken for an additional 2-3 minutes after baking.
