A delightful stir-fry that combines earthy mushrooms and protein-packed tofu, bursting with flavor from garlic and ginger.

- 14 oz firm tofu, cubed
- 8 oz mushrooms, sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Optional vegetables (bell peppers, broccoli, etc.)
- Salt and pepper to taste
Instructions
- Drain and press the tofu to remove excess moisture, then cut into cubes.
- Heat the olive oil in a pan over medium-high heat.
- Add the tofu cubes and cook until golden and crispy, about 5-7 minutes.
- Toss in sliced mushrooms, minced garlic, and grated ginger, and sauté until mushrooms are tender.
- Pour in the soy sauce and stir, allowing flavors to meld for 2-3 minutes.
- Add optional vegetables and sauté until desired doneness.
- Season with salt and pepper to taste, and serve hot.
Notes
For best results, press tofu for 15-20 minutes for a crispier texture. Customize with any vegetables you have on hand.
