- 2 lbs beef chuck roast
- 1 lb beef short ribs
- 4 cups beef broth
- 5 dry guajillo peppers
- 3 dried ancho peppers
- 2 garlic cloves
- 1 onion, quartered
- 2 tsp ground cumin
- 2 tsp dried oregano
- Salt and pepper to taste
- Corn tortillas
- Chopped onion and cilantro for topping
- Lime wedges for serving
Instructions
- Soak the guajillo and ancho peppers in hot water for about 10-15 minutes until softened. Drain and blend with garlic, onion, cumin, oregano, and a bit of beef broth until smooth.
- Add beef chuck, short ribs, and the blended sauce to a large pot. Pour in the remaining beef broth, season, and bring to a boil.
- Reduce heat to low, cover, and let simmer for about 3 hours until meat is tender.
- Once cooked, shred the meat and serve in warm corn tortillas.
- Top with chopped onions, cilantro, and a squeeze of lime juice.
Notes
