Birria tacos are mouthwatering delights that combine slow-cooked beef with fresh tortillas, creating a rich flavor experience.


Ingredients

  • 2 lbs beef chuck roast
  • 1 lb beef short ribs
  • 4 cups beef broth
  • 5 dry guajillo peppers
  • 3 dried ancho peppers
  • 2 garlic cloves
  • 1 onion, quartered
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped onion and cilantro for topping
  • Lime wedges for serving

Instructions

  1. Soak the guajillo and ancho peppers in hot water for about 10-15 minutes until softened. Drain and blend with garlic, onion, cumin, oregano, and a bit of beef broth until smooth.
  2. Add beef chuck, short ribs, and the blended sauce to a large pot. Pour in the remaining beef broth, season, and bring to a boil.
  3. Reduce heat to low, cover, and let simmer for about 3 hours until meat is tender.
  4. Once cooked, shred the meat and serve in warm corn tortillas.
  5. Top with chopped onions, cilantro, and a squeeze of lime juice.
