Description

Delightful treats combining cocoa, butter, and coconut for a chewy, satisfying bite.


Ingredients

Scale
  • 600 g granulated sugar
  • 170 g unsalted butter, melted
  • 310 ml whole milk
  • 240 g large rolled oats
  • 80 g unsweetened fine desiccated coconut
  • 90 g unsweetened cocoa powder
  • 120 g unsweetened fine desiccated coconut, for rolling

Instructions

  1. In a large saucepan, combine granulated sugar, melted butter, and whole milk.
  2. Heat mixture over medium heat until it reaches a gentle boil, about 5–6 minutes or until 107–110°C.
  3. In a separate bowl, mix rolled oats, 80 g coconut, and cocoa powder.
  4. Pour hot mixture over the dry ingredients and stir to combine.
  5. Allow mixture to cool to room temperature, then refrigerate until chilled, ideally overnight.
  6. Use chilled hands to scoop and roll the mixture into 4 cm balls, coating in reserved coconut.
  7. Store in an airtight container in the refrigerator or freeze for longer storage.

Notes

Using a candy thermometer ensures the right consistency. Roll snowballs with chilled hands to avoid stickiness.
