Description
Delightful no-bake cheesecake bars combining creamy cheesecake with the unique flavor of Biscoff cookies.
Ingredients
Scale
- 2 packages Biscoff cookies (5.3 oz each, divided)
- 6 tablespoons unsalted butter (melted)
- 24 oz cream cheese (softened to room temperature)
- 1 cup powdered sugar
- 1 cup Biscoff cookie butter spread
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 1½ cups heavy whipping cream (cold)
- 2 tablespoons granulated sugar
- 1/4 cup additional Biscoff spread (for drizzling)
- Extra Biscoff cookies (for garnish)
Instructions
- Prepare the pan: Line a 9×13-inch baking pan with parchment paper, letting the edges hang over the sides for easy removal. Lightly grease the parchment with cooking spray to prevent sticking.
- Reserve about 6-8 Biscoff cookies for garnish. Place the remaining cookies in a food processor and pulse until they’re fine crumbs.
- Transfer the cookie crumbs to a large bowl and stir in the melted butter until it resembles wet sand and holds together when pressed.
- Press the cookie mixture into the bottom of the prepared pan. Refrigerate it for at least 30 minutes to set.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy, around 3-4 minutes.
- Add the powdered sugar and mix until well combined.
- Combine the Biscoff cookie butter, vanilla extract, and salt with the cream cheese mixture and beat until smooth.
- Whip the cold heavy cream and granulated sugar in a separate bowl until stiff peaks form.
- Fold a third of the whipped cream into the Biscoff cream cheese mixture to lighten it, then fold in the remaining whipped cream in two additions.
- Spread the filling evenly over the chilled crust and drizzle warm Biscoff spread on top.
- Crush the reserved Biscoff cookies and sprinkle them over the top. Refrigerate for at least 4 hours or overnight.
- Use the parchment overhang to lift the bars from the pan. Cut with a warm knife and garnish as desired.
Notes
For best flavor, let the bars chill overnight and use room temperature ingredients.
