Description

Delightful no-bake cheesecake bars combining creamy cheesecake with the unique flavor of Biscoff cookies.


Ingredients

  • 2 packages Biscoff cookies (5.3 oz each, divided)
  • 6 tablespoons unsalted butter (melted)
  • 24 oz cream cheese (softened to room temperature)
  • 1 cup powdered sugar
  • 1 cup Biscoff cookie butter spread
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1½ cups heavy whipping cream (cold)
  • 2 tablespoons granulated sugar
  • 1/4 cup additional Biscoff spread (for drizzling)
  • Extra Biscoff cookies (for garnish)

Instructions

  1. Prepare the pan: Line a 9×13-inch baking pan with parchment paper, letting the edges hang over the sides for easy removal. Lightly grease the parchment with cooking spray to prevent sticking.
  2. Reserve about 6-8 Biscoff cookies for garnish. Place the remaining cookies in a food processor and pulse until they’re fine crumbs.
  3. Transfer the cookie crumbs to a large bowl and stir in the melted butter until it resembles wet sand and holds together when pressed.
  4. Press the cookie mixture into the bottom of the prepared pan. Refrigerate it for at least 30 minutes to set.
  5. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy, around 3-4 minutes.
  6. Add the powdered sugar and mix until well combined.
  7. Combine the Biscoff cookie butter, vanilla extract, and salt with the cream cheese mixture and beat until smooth.
  8. Whip the cold heavy cream and granulated sugar in a separate bowl until stiff peaks form.
  9. Fold a third of the whipped cream into the Biscoff cream cheese mixture to lighten it, then fold in the remaining whipped cream in two additions.
  10. Spread the filling evenly over the chilled crust and drizzle warm Biscoff spread on top.
  11. Crush the reserved Biscoff cookies and sprinkle them over the top. Refrigerate for at least 4 hours or overnight.
  12. Use the parchment overhang to lift the bars from the pan. Cut with a warm knife and garnish as desired.

Notes

For best flavor, let the bars chill overnight and use room temperature ingredients.
