A delightful twist on the classic Italian dessert, blending rich flavors of coffee-soaked ladyfingers, creamy mascarpone cheese, and luscious cherries without the need for baking.

- 1 cup strong brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 package (7 oz) ladyfingers
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh cherries, pitted and halved
- 2 oz dark chocolate, grated
Instructions
- In a shallow dish, combine the brewed coffee and coffee liqueur, if using. Dip each ladyfinger into the coffee mixture briefly and layer them in a square or rectangular dish.
- In a mixing bowl, beat the mascarpone cheese with the powdered sugar and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.
- Spread half of the mascarpone mixture over the layer of ladyfingers. Top with half of the fresh cherries.
- Repeat the layers, finishing with the mascarpone mixture on top. Refrigerate for at least 4 hours or overnight to set.
- Before serving, garnish with grated dark chocolate and any remaining cherries.
Notes
Ideal for family gatherings and can be prepared in advance. Store in an airtight container and refrigerate for up to 4 days.
