- 1 1/4 cups graham cracker crumbs
- 6 tablespoons butter (melted)
- 16 oz cream cheese (softened, two 8 oz packages)
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 cup heavy cream (cold)
- 1 cup canned pie filling (cherry, blueberry, etc., or topping of choice)
Instructions
- Combine graham cracker crumbs and melted butter in a small bowl, mixing until well moistened. Press mixture into the bottom of an 8 or 9-inch glass pie plate and refrigerate.
- Mix softened cream cheese and granulated sugar in a large bowl until smooth and creamy. Scrape the sides to avoid lumps.
- Add chilled heavy cream to the cream cheese mixture in four increments, whipping on medium-high speed until thick and fluffy, about one minute.
- Pour the filling into the prepared pie shell. Smooth the top with a spatula and cover with plastic wrap. Refrigerate for at least 2 hours or overnight.
- Serve by slicing into pieces and adding your favorite topping like pie filling or a dollop of whipped cream.
Notes
Allowing the cheesecake to set overnight creates a firmer structure. Experiment with different crusts and toppings for variations.
