- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 9–10 graham crackers
- Mint leaves for garnish (optional)
Instructions
- In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form, about 3-5 minutes.
- Layer graham crackers at the bottom of a rectangular dish, placing them closely together.
- Spread a layer of whipped cream over the cookies, followed by a generous layer of mixed berries.
- Repeat the layers until you run out of ingredients, finishing with a layer of whipped cream on top.
- Cover and refrigerate for at least 240 minutes or overnight.
- Garnish with additional berries and mint leaves before serving.
Notes
Use fresh berries for the best flavor and texture. This cake tastes even better the day after it’s made.
