- 12 oz linguine or spaghetti
- 1 lb large raw shrimp, peeled and deveined
- 1½ tbsp Old Bay seasoning, divided
- 2 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic, minced
- Juice and zest of 1 lemon
- ½ tsp salt
- ¼ tsp red pepper flakes (optional)
- ¼ cup chopped fresh parsley
- Grated Parmesan (optional)
- ½ cup reserved pasta water
Instructions
- Start by cooking the pasta in a pot of salted boiling water until it’s al dente, about 8-10 minutes. Remember to reserve ½ cup of the pasta water before draining!
- While the pasta cooks, prepare your shrimp. Toss them in a bowl with 1 tablespoon of Old Bay seasoning, salt, and olive oil, ensuring they are evenly coated.
- Heat a large skillet over medium-high heat and sear the shrimp for about 1-2 minutes on each side until they turn pink and firm. Transfer them to a plate and set aside.
- In the same skillet, lower the heat to medium and add butter along with the minced garlic. Sauté for about 1-2 minutes until fragrant but not browned.
- Next, stir in the lemon juice, lemon zest, red pepper flakes (if using), remaining ½ tablespoon of Old Bay, and the reserved pasta water.
- Finally, add the cooked pasta and shrimp back into the skillet. Toss everything together until well-coated and warmed through.
- To serve, top with fresh parsley, sprinkle with Parmesan if desired, and add an extra squeeze of lemon for brightness.
Notes
Don’t overcook the shrimp and always reserve enough pasta water for a perfect sauce consistency.
