- 1 lb large shrimp, peeled and deveined
- 1 1/2 tbsp Old Bay seasoning
- 1 tbsp olive oil
- 1 lime, juiced
- 1 1/2 cups cooked white or brown rice
- 1 cup canned black beans, drained and rinsed
- 1/2 cup red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 1/4 tsp salt
- 1/4 tsp cumin
- 1/2 cup shredded cheese
- 1/2 cup sour cream or chipotle mayo
- 4 large flour tortillas
- Diced avocado or guacamole
- Salsa or hot sauce
- Corn kernels
- Shredded lettuce or spinach
Instructions
- Combine shrimp with olive oil, Old Bay seasoning, and lime juice. Marinate for 10–15 minutes.
- Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side until pink and slightly seared.
- In another bowl, mix rice, black beans, red onion, cilantro, salt, and cumin. Warm slightly.
- Warm tortillas on a skillet or flame until soft and pliable.
- Lay a tortilla flat and add rice-bean mix, shrimp, cheese, and extras. Drizzle with sour cream or sauce.
- Fold and roll the burrito tightly, grill seam-side down for 1–2 minutes until golden.
- Slice in half and serve with lime wedges, salsa, or guacamole.
Notes
Marinate shrimp longer for more flavor. Use fresh ingredients for best results.
