Description

Juicy shrimp seasoned with Old Bay, wrapped in a tortilla with fresh veggies and creamy avocado, perfect for casual dinners or gatherings.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 1/2 tbsp Old Bay seasoning
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 1 1/2 cups cooked white or brown rice
  • 1 cup canned black beans, drained and rinsed
  • 1/2 cup red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 tsp salt
  • 1/4 tsp cumin
  • 1/2 cup shredded cheese
  • 1/2 cup sour cream or chipotle mayo
  • 4 large flour tortillas
  • Diced avocado or guacamole
  • Salsa or hot sauce
  • Corn kernels
  • Shredded lettuce or spinach

Instructions

  1. Combine shrimp with olive oil, Old Bay seasoning, and lime juice. Marinate for 10–15 minutes.
  2. Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side until pink and slightly seared.
  3. In another bowl, mix rice, black beans, red onion, cilantro, salt, and cumin. Warm slightly.
  4. Warm tortillas on a skillet or flame until soft and pliable.
  5. Lay a tortilla flat and add rice-bean mix, shrimp, cheese, and extras. Drizzle with sour cream or sauce.
  6. Fold and roll the burrito tightly, grill seam-side down for 1–2 minutes until golden.
  7. Slice in half and serve with lime wedges, salsa, or guacamole.

Notes

Marinate shrimp longer for more flavor. Use fresh ingredients for best results.
