Description

Juicy shrimp seasoned with Old Bay, wrapped in a tortilla with fresh veggies and creamy avocado, perfect for casual dinners or gatherings.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 1/2 tbsp Old Bay seasoning
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 1 1/2 cups cooked white or brown rice
  • 1 cup canned black beans, drained and rinsed
  • 1/2 cup red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 tsp salt
  • 1/4 tsp cumin
  • 1/2 cup shredded cheese
  • 1/2 cup sour cream or chipotle mayo
  • 4 large flour tortillas
  • Diced avocado or guacamole
  • Salsa or hot sauce
  • Corn kernels
  • Shredded lettuce or spinach

Instructions

  1. Combine shrimp with olive oil, Old Bay seasoning, and lime juice. Marinate for 10โ€“15 minutes.
  2. Heat a skillet over medium-high heat. Cook shrimp for 2โ€“3 minutes per side until pink and slightly seared.
  3. In another bowl, mix rice, black beans, red onion, cilantro, salt, and cumin. Warm slightly.
  4. Warm tortillas on a skillet or flame until soft and pliable.
  5. Lay a tortilla flat and add rice-bean mix, shrimp, cheese, and extras. Drizzle with sour cream or sauce.
  6. Fold and roll the burrito tightly, grill seam-side down for 1โ€“2 minutes until golden.
  7. Slice in half and serve with lime wedges, salsa, or guacamole.

Notes

Marinate shrimp longer for more flavor. Use fresh ingredients for best results.
