Ingredients

  • 1 cup pineapple chunks
  • Juice of 1 lime
  • 8 small corn or flour tortillas
  • ยฝ cup red onion, finely chopped
  • ยฝ cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1 jalapeรฑo, sliced (optional for heat)

Instructions

  1. Prep your ingredients: Dice the chicken breasts into bite-sized pieces and finely chop the red onion and cilantro.
  2. Heat the skillet: Place a skillet over medium heat and add olive oil, allowing it to warm up.
  3. Cook the chicken: Add the diced chicken to the skillet and season with spices. Cook until nearly done.
  4. Add the pineapple: Mix in the pineapple chunks and continue cooking until caramelized.
  5. Warm the tortillas: In a separate pan, warm the tortillas over low heat.
  6. Assemble the tacos: On each tortilla, add the chicken-pineapple mixture and top with lime juice, red onion, cilantro, avocado, and jalapeรฑo slices.
