Ingredients

Scale
  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy, casing removed)
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 12 oz penne pasta
  • 2 cups fresh spinach, chopped

  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the Italian sausage and cook until browned, breaking it into pieces.
  3. Stir in the minced garlic and red pepper flakes, cooking until fragrant.
  4. Pour in the chicken broth and heavy cream; bring to a gentle simmer.
  5. Stir in the penne pasta, cover, and cook for 10-12 minutes until tender.
  6. Toss in the chopped spinach until wilted and sprinkle with Parmesan cheese. Season with salt and pepper to taste.

Notes

For a lighter dish, substitute half-and-half for heavy cream. Feel free to add other vegetables or adjust the spice level to your preference.
