- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1/2 cup heavy cream
- 1 cup vegetable broth
- 1/2 cup grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- Fresh basil leaves for garnish
Instructions
- Heat a large skillet over medium heat. Add olive oil and let it heat for about a minute.
- Add chopped onion and cook until soft and translucent, about 5 minutes.
- Add minced garlic and sauté for 1 minute, ensuring it doesn’t burn.
- Pour in diced tomatoes, including juice, and stir to combine.
- Sprinkle in dried basil, oregano, and red pepper flakes; season with salt and black pepper.
- Add vegetable broth and bring to a simmer.
- Stir in the pasta, ensuring it’s evenly submerged, and cover the skillet.
- Cook for 10-12 minutes, stirring occasionally, until pasta is al dente.
- Stir in heavy cream and simmer for another 2-3 minutes to thicken.
- Remove from heat and mix in grated Parmesan cheese until melted and incorporated.
- Garnish with fresh basil leaves before serving.
Notes
For a gluten-free option, use gluten-free pasta. Adjust the spice level with more or less red pepper flakes as desired.
