- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat. Season chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Sear for about 5 minutes on each side, until golden-brown.
- In a small bowl, whisk together BBQ sauce and honey.
- Pour the BBQ mixture over chicken in the skillet. Add rice and chicken broth, stirring to combine.
- Bring to a gentle simmer, cover, and reduce heat to low. Cook for about 20 minutes, until rice is tender and flavors are absorbed.
- In the last 5 minutes, sprinkle mixed vegetables on top of rice. Cover again to steam the vegetables.
- Let sit for 5 minutes, then fluff rice with a fork before serving.
Notes
For a spicy kick, add cayenne pepper to the BBQ mixture. Substitute rice with cauliflower rice for a low-carb version.
