Description

Ingredients

  • 1 lb chicken thighs or breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until fragrant.
  2. Season the chicken with salt, pepper, paprika, and thyme, then add to the pot. Cook until browned on all sides.
  3. Add the rice to the pot, stirring to coat it in the oil.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes.
  6. Add frozen peas and carrots, stirring gently.
  7. Cover and cook for an additional 5-10 minutes, until rice is fluffy and chicken is cooked through.
  8. Fluff the rice with a fork and serve.
