- 1 lb chicken breast, diced
- 8 oz penne pasta
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Fresh cilantro for garnish
Instructions
- Heat a splash of olive oil over medium heat. Add the diced chicken and cook until it’s browned on all sides, usually about 5-7 minutes.
- Add the sliced peppers and onions, along with the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Stir and cook for an additional 3-4 minutes until the veggies begin to soften.
- Pour in the chicken broth and bring to a boil. Add the penne pasta and cook according to package instructions, around 10-12 minutes, stirring occasionally.
- Once the pasta is cooked, lower the heat and stir in the heavy cream and shredded cheddar cheese until melted and creamy.
- Serve warm, garnished with fresh cilantro, and enjoy!
