- 2 cups Shredded Chicken Breast (Opt for lean cuts.)
- 24 ounces Marinara Sauce (Homemade or store-bought.)
- 2 cups Chicken Broth (Can substitute with vegetable broth.)
- 1 cup Shredded Cheese (Mozzarella)
- 0.5 cup Grated Parmesan Cheese (Feel free to mix it up with provolone or cheddar.)
- 2 cloves Garlic (Minced, fresh preferred.)
- 2 tablespoons Olive Oil (Can substitute with butter.)
- 1 teaspoon Italian Seasoning (Adjust according to taste.)
- Salt (To taste.)
- Pepper (To taste.)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add minced garlic and cook until fragrant, about 30 seconds.
- Stir in the shredded chicken and Italian seasoning. Cook for a couple of minutes until heated through.
- Add elbow macaroni, marinara sauce, and chicken broth. Stir to combine, then bring to a boil.
- Reduce heat to low, cover, and let simmer until the pasta is cooked, about 12-15 minutes.
- Once the pasta is tender, stir in shredded mozzarella and grated Parmesan until melted and well combined.
Notes
For a vegan version, replace chicken with chickpeas or lentils and use plant-based cheese. Adjust seasoning according to taste and add herbs for flavor enhancement.
