Description

Ingredients

  • 2 cups Shredded Chicken Breast (Opt for lean cuts)
  • 24 ounces Marinara Sauce (Homemade or store-bought)
  • 2 cups Chicken Broth (Can substitute with vegetable broth)
  • 1 cup Shredded Cheese (Mozzarella)
  • 0.5 cup Grated Parmesan Cheese (Feel free to mix it up with provolone or cheddar)
  • 2 cloves Garlic (Minced, fresh preferred)
  • 2 tablespoons Olive Oil (Can substitute with butter)
  • 1 teaspoon Italian Seasoning (Adjust according to taste)
  • Salt (To taste)
  • Pepper (To taste)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Toss in the shredded chicken and stir until warmed through, about 3-5 minutes.
  2. Pour in marinara sauce and chicken broth, bringing it to a simmer. Add elbow macaroni, Italian seasoning, salt, and pepper. Stir and cover the pot. Cook for about 10-15 minutes, stirring occasionally, until the pasta is al dente.
  3. Uncover the pot and sprinkle shredded mozzarella and grated Parmesan cheese over the top. Cover again and cook for an additional 2-3 minutes, until the cheese is bubbly and melted.
  4. Give it a stir to meld the flavors and serve warm, garnished with fresh herbs if desired.
