Description

A delicious and comforting one-pot meal made with tender chicken, creamy cheeses, and rich marinara sauce, ready in just 30 minutes.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 24 ounces marinara sauce
  • 2 cups chicken broth
  • 8 ounces penne or rotini pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large skillet or pot, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown and cooked through. Remove the chicken from the pot and set it aside.
  2. In the same pot, add the diced onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.
  3. Pour in the marinara sauce and chicken broth. Add the uncooked pasta and Italian seasoning, stirring well to combine.
  4. Bring the mixture to a boil, then reduce the heat to medium-low. Cover and cook for 12-15 minutes, stirring occasionally.
  5. Return the cooked chicken to the pot. Stir in the mozzarella and Parmesan cheeses until melted and creamy.
  6. Garnish with fresh basil if desired. Serve hot.

Notes

Serve with garlic bread or a fresh salad for a complete meal. Allows for customization with different cheeses or added vegetables.
