- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 24 ounces marinara sauce
- 2 cups chicken broth
- 8 ounces penne or rotini pasta
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1/4 cup fresh basil, chopped
Instructions
- In a large skillet or pot, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown and cooked through. Remove the chicken from the pot and set it aside.
- In the same pot, add the diced onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.
- Pour in the marinara sauce and chicken broth. Add the uncooked pasta and Italian seasoning, stirring well to combine.
- Bring the mixture to a boil, then reduce the heat to medium-low. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Return the cooked chicken to the pot. Stir in the mozzarella and Parmesan cheeses until melted and creamy.
- Garnish with fresh basil, if desired. Serve hot and enjoy!
Notes
For a lighter option, consider using whole wheat or cauliflower pasta. Adjust seasoning as per taste, and feel free to mix cheese varieties for extra flavor.
