- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 1 can (13.5 oz) full-fat coconut milk
- 1 tbsp fresh ginger, grated
- 1 medium onion, diced
- 4 garlic cloves, minced
- 2 tbsp curry powder
- 2 bell peppers, chopped
- 2 cups spinach or kale
- Juice of 1 lime
- Salt & pepper to taste
Instructions
- Heat a drizzle of oil in a pot over medium heat. Sauté the diced onions until translucent (about 5 minutes).
- Add minced garlic and grated ginger and cook until fragrant.
- Add chicken breasts to the pot and sear for 5-7 minutes on each side until golden brown.
- Pour in the coconut milk and add curry powder. Stir well to combine.
- Add chopped bell peppers and bring to a gentle simmer. Cook for 20 minutes.
- Stir in spinach or kale until wilted and squeeze lime juice over the dish before serving.
Notes
Use full-fat coconut milk for the best flavor and creaminess. Adjust the spice level by adding red pepper flakes for heat or reducing curry powder for milder taste.
