Description

A delightful one-pot meal featuring tender chicken, aromatic spices, and rich coconut milk, perfect for a cozy weeknight dinner.


Ingredients

  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp fresh ginger, grated
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 2 tbsp curry powder
  • 2 bell peppers, chopped
  • 2 cups spinach or kale
  • Juice of 1 lime
  • Salt & pepper to taste

Instructions

  1. Heat a drizzle of oil in a pot over medium heat. Sauté the diced onions until translucent (about 5 minutes).
  2. Add minced garlic and grated ginger and cook until fragrant.
  3. Add chicken breasts to the pot and sear for 5-7 minutes on each side until golden brown.
  4. Pour in the coconut milk and add curry powder. Stir well to combine.
  5. Add chopped bell peppers and bring to a gentle simmer. Cook for 20 minutes.
  6. Stir in spinach or kale until wilted and squeeze lime juice over the dish before serving.

Notes

Use full-fat coconut milk for the best flavor and creaminess. Adjust the spice level by adding red pepper flakes for heat or reducing curry powder for milder taste.
