- 1 pound pasta (penne or fettuccine)
- 4 cups vegetable or chicken broth
- 1 tablespoon olive oil
- 2 tablespoons butter
- 6 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot or deep skillet, heat the olive oil and butter over medium heat.
- Add the minced garlic and cook for 1–2 minutes until fragrant.
- Pour in the broth and bring to a gentle simmer.
- Add the uncooked pasta, stirring well to coat.
- Cover and cook for 10–12 minutes, stirring occasionally.
- Once the pasta is al dente and most of the broth is absorbed, reduce the heat.
- Stir in the heavy cream and let it simmer for 3–4 minutes until thickened.
- Remove from heat and stir in the grated Parmesan until melted and creamy.
- Season with salt, black pepper, and red pepper flakes if using.
- Garnish with chopped fresh parsley and serve immediately.
Notes
For a lighter version, reduce the heavy cream or use half-and-half. Use high-quality broth for best flavor.
