- 8 oz pasta (fettuccine or linguine)
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 4 cups vegetable broth (or beef broth)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup grated Gruyere cheese (or Swiss cheese)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil and butter over medium heat. Add the sliced onions and cook until they are caramelized, about 15-20 minutes, stirring occasionally.
- Add the garlic and thyme, and cook for an additional 1-2 minutes until fragrant.
- Pour in the vegetable broth and bring to a simmer.
- Add the pasta to the pot and cook according to package instructions, stirring occasionally.
- Once the pasta is cooked and most of the liquid is absorbed, remove from heat.
- Stir in the grated cheese until melted and creamy. Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
Notes
Stir the pasta occasionally while it cooks to prevent sticking. For a richer flavor, let the onions caramelize until they are deeply golden.
