- 1 lb boneless, skinless chicken breasts, diced
- 2 tablespoons olive oil
- 2 tablespoons butter (plus more if needed)
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 1/2 cups heavy cream
- 8 oz penne pasta (uncooked)
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Sear the chicken: In a large pot, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the diced chicken, season with salt, pepper, and Italian seasoning, and sear until golden brown and cooked through. Remove and set aside.
- Sauté garlic: Lower heat to medium, add minced garlic to the pot, and sauté for about a minute until aromatic.
- Create the sauce: Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer, then add the uncooked penne pasta.
- Cook the pasta: Cover pot and cook for 10-12 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
- Finish the dish: Reduce heat, stir in Parmesan cheese until melted, then return cooked chicken to the pot.
- Garnish and serve: Garnish with chopped parsley if desired and serve hot!
Notes
Use freshly grated Parmesan for best results. Adjust consistency of sauce as needed with additional broth or cream.
