- 1 lb boneless, skinless chicken breasts, diced
- 2 tablespoons olive oil
- 2 tablespoons butter (plus more if needed)
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 1/2 cups heavy cream
- 8 oz penne pasta (uncooked)
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Prepare the chicken: Heat the olive oil and 2 tablespoons of butter in a large pot over medium-high heat. Add the diced chicken, season with salt, pepper, and Italian seasoning, and sear until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- Sauté the garlic: Lower the heat to medium, add more butter if necessary, and sauté the minced garlic for about a minute until fragrant.
- Combine ingredients: Pour in the chicken broth and heavy cream, bring to a light simmer, then stir in the uncooked penne pasta. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Finish the dish: Lower the heat, stir in the Parmesan cheese until melted and the sauce thickens. Add the cooked chicken back into the pot and stir to combine.
- Serve hot, garnished with chopped parsley if desired.
Notes
Don’t overcook the chicken; adjust creaminess by adding less cream or more broth. For a thicker sauce, additional cheese can be added.
