- 12-ounce package gnocchi (regular or gluten-free)
- 1½ cups shredded cooked chicken breast
- ½ cup frozen peas
Instructions
- Melt butter in a Dutch oven over medium-high heat. Add sliced carrots, mushrooms, celery, and shallot. Season with salt and pepper, cooking until vegetables soften (5-7 minutes).
- Stir in minced garlic, poultry seasoning, and a pinch of thyme; cook for 1 minute.
- Sprinkle flour over vegetables and mix well. Gradually add chicken broth, stirring constantly. Add milk and bring to a simmer until sauce thickens.
- Add gnocchi, keeping the pot simmering. Cook for 5-6 minutes until gnocchi is tender.
- Stir in shredded chicken and frozen peas. Adjust seasoning before serving.
