- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- ½ teaspoon crushed red pepper flakes
- ½ cup sun-dried tomatoes, chopped
- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 cups chicken broth
- ½ cup heavy cream
- ½ cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh basil, chopped (optional)
Instructions
- Heat olive oil and butter in a large skillet or pot over medium heat.
- Add minced garlic, red pepper flakes, and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Add shrimp, seasoning with salt and pepper, and cook for 1-2 minutes per side until pink. Remove and set aside.
- Add orzo to the pot, stirring to coat in oils and toasting for 1-2 minutes.
- Pour in chicken broth and bring to a simmer. Cook orzo until tender and most liquid is absorbed (7-10 minutes).
- Stir in heavy cream, Parmesan, and Italian seasoning, cooking until thickened. Return shrimp to the pot, combine well, and adjust seasoning as needed. Garnish with fresh basil and serve warm.
Notes
For a lighter dish, reduce heavy cream or substitute with half-and-half. Add vegetables like spinach or peas for added nutrition.
