- 1 lb smoked sausage (kielbasa or andouille)
- 1 cup long grain rice
- 1 medium onion, chopped
- 1 cup bell peppers, diced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 14.5 oz can diced tomatoes (with juices)
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat vegetable oil in a large pot over medium heat and add sliced smoked sausage. Sauté until golden brown, about 5 minutes.
- Stir in chopped onion and bell peppers, sautéing until softened, about 3-4 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Mix in uncooked long grain rice, diced tomatoes, chicken broth, paprika, oregano, salt, and pepper. Stir to combine.
- Bring the mixture to a gentle boil. Reduce heat to low, cover tightly, and simmer for about 20 minutes until the rice absorbs all the liquid.
- After simmering, remove from heat but keep covered for another 5 minutes.
- Fluff with a fork before serving.
Notes
Use low-sodium broth to control sodium levels. Allowing the dish to rest covered off heat ensures fluffy rice.
