A comforting one-pot dish rich in flavors with tender chicken, cheese-stuffed tortellini, and a creamy garlic sauce.

- 1 lb cheese tortellini (fresh or refrigerated)
- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breast or thighs, cubed
- Salt and black pepper to taste
- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- 1 tsp crushed red pepper flakes (adjust to taste)
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/2 tsp paprika
- 1/2 tsp onion powder
- 1 tsp Italian seasoning
- Fresh parsley or basil, for garnish
- Optional: a squeeze of lemon juice
Instructions
- Heat the olive oil in a large pot over medium-high heat. Add the cubed chicken and season with salt, pepper, paprika, and onion powder. Sauté until golden brown and fully cooked. Remove and set aside.
- In the same pot, melt the butter over medium heat. Add the minced garlic and crushed red pepper flakes, cooking until fragrant (1-2 minutes).
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Stir in the heavy cream and Italian seasoning, allowing it to gently simmer.
- Add the tortellini to the sauce and cook uncovered for 5-7 minutes until tender, stirring occasionally.
- Return the cooked chicken to the pot. Stir in the parmesan cheese and let simmer for another 1-2 minutes. Garnish with fresh herbs and a squeeze of lemon juice before serving.
Notes
Use fresh tortellini for better texture. Adjust spiciness to taste and don’t let the cream boil to prevent curdling.
