Ingredients

  • 2 cups shredded cheese (cheddar or vegan alternative)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the mixed vegetables and sauté for about 3-4 minutes until they are slightly tender.
  2. Add the elbow macaroni and pour in the vegetable broth. Bring the mixture to a boil.
  3. Once boiling, reduce the heat to a simmer, cover the pot, and let it cook for 8-10 minutes until the pasta is al dente and most of the liquid is absorbed.
  4. Remove the pot from the heat and stir in the shredded cheese until it’s melted and creamy.
  5. Season with salt, pepper, and any other spices you prefer before serving.

Notes
