Description

A delightful dish combining sweet corn and savory kielbasa in a quick and easy one-skillet meal.

Ingredients

Scale
  • 1 cup cooked rice
  • 1 cup sweet corn (fresh or frozen)
  • 1 kielbasa sausage, sliced
  • 2 tablespoons olive oil
  • 2 eggs, beaten
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic, sautéing until fragrant.
  3. Incorporate the sliced kielbasa into the skillet, cooking until browned and slightly crispy.
  4. Stir in the sweet corn and cooked rice, mixing everything well.
  5. Push the mixture to one side of the skillet, pouring the beaten eggs on the other side. Scramble until cooked through.
  6. Combine everything together, seasoning with salt and pepper to taste. Garnish with chopped green onions, if desired, and serve hot.

Notes

For best results, use day-old rice and adjust seasonings while cooking for better flavor.
