Description

These delightful mini cheesecakes capture the essence of summer with bright flavors of fresh oranges, a creamy filling, and a buttery graham cracker crust.


Ingredients

  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1/4 cup freshly squeezed orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Extra orange zest or candied orange peel for garnish

Instructions

  1. Preheat your oven to 325°F (160°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a mixing bowl, combine graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press into the bottom of each muffin cup to form a crust. Bake for 5–6 minutes and let cool.
  3. In a large bowl, beat softened cream cheese until smooth, gradually adding sugar.
  4. Mix in sour cream, orange juice, orange zest, and vanilla extract until fully combined.
  5. Add eggs one at a time, mixing gently after each addition to avoid cracking.
  6. Divide filling evenly over the crusts. Tap muffin pan on the counter to release air bubbles.
  7. Bake for 18–22 minutes until centers are set but slightly jiggly. Leave in oven for 10 minutes with door ajar.
  8. Cool completely on a wire rack, then chill in the refrigerator for at least 4 hours or overnight.
  9. When serving, beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Pipe onto cheesecakes.
  10. Garnish with extra orange zest or candied orange peel before serving.
