Description

A comforting and indulgent overnight baked banana French toast casserole made with custardy bread and caramelized bananas.


Ingredients

  • 1 lb loaf Sourdough or French Bread, cut into chunks
  • 8 large eggs
  • 2 cups (480ml) milk (whole or 2%)
  • 1/2 cup (120ml) heavy whipping cream
  • 1/2 cup (104g) sugar
  • 1/4 cup (36g) light brown sugar, unpacked
  • 2 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 67 medium-sized bananas, chopped
  • 3/4 cup (98g) all-purpose flour
  • 3/4 cup (169g) firmly packed brown sugar
  • 1 tsp cinnamon
  • 1/2 cup (112g) salted butter, cut into pieces

Instructions

  1. Prepare the Dish: Grease a 9×13 inch casserole dish to prevent sticking.
  2. Mix Bread and Eggs: In a large bowl, add the bread chunks and set aside. In another bowl, whisk together the eggs, milk, cream, sugars, vanilla extract, and cinnamon.
  3. Combine Everything: Pour the egg mixture over the bread chunks and add the chopped banana. Gently stir to combine.
  4. Resting Time: Transfer the mixture into your greased casserole dish, cover and refrigerate overnight.
  5. Bake: Preheat your oven to 350°F (176°C) and bake for about 35-40 minutes.
  6. Add the Topping: Mix the dry ingredients for the streusel, incorporate the butter, sprinkle over the casserole and bake for an additional 5 minutes.
  7. Serve: Enjoy warm, drizzled with syrup.

Notes

Use ripe bananas for maximum sweetness. Adjust the sweetness to your preference.
