Description

Make mornings fun with this customizable pancake tacos recipe! These soft, foldable pancakes are filled with sweet or savory toppings perfect for brunch or breakfast meal prep.


Ingredients

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1 tbsp sugar

1/4 tsp salt

1 egg

3/4 cup milk (or dairy-free option)

1 tbsp melted butter or oil

1 tsp vanilla extract (optional)

Sweet or savory fillings (berries, yogurt, eggs, cheese, etc.)


Instructions

1. In a bowl, mix flour, baking powder, baking soda, sugar, and salt.

2. In another bowl, whisk egg, milk, butter, and vanilla until combined.

3. Add wet ingredients to dry; stir gently (don’t overmix).

4. Let batter rest for 5–10 minutes while heating a skillet.

5. Pour 1/4 cup batter onto greased pan for each pancake.

6. Cook on medium heat until bubbles form; flip and cook 1–2 minutes.

7. While warm, fold pancakes into taco shapes and let them cool slightly.

8. Fill with your choice of toppings sweet or savory.

9. Serve warm or refrigerate/freeze shells for later.

Notes

Make ahead and store folded shells in an airtight container.
